Crab Cheese Bundles


Healthy Recipes


Ingredients:

  • 3 sheets phyllo dough, defrosted (18” X14” sheets)
  • ½ cup clump crabmeat
  • 2 tablespoons sliced green onions
  • 2 tablespoons finely chopped green pepper
  • ½ cup nonfat ricotta cheese
  • 1 teaspoon Dijon mustard
  • 1/8 teaspoon black pepper
  • 1 tablespoon melted butter or margarine

Heat oven to 400 degrees.  Spray large baking sheet with nonstick vegetable cooking spray.  In a medium mixing bowl, combine green onion, green pepper, crabmeat, ricotta cheese, mustard and pepper.  Place 1 sheet of phyllo dough on a flat work surface and brush sheet with 1/3 of butter.  Lay second sheet of phyllo dough over the first sheet.

Then brush half of the remaining butter on sheet.  Lay the third sheet over the second sheet.  Then brush remaining butter over the third sheet.  Cut Layered sheets length-wise into 16 quarters.  Put 2 teaspoons of filling in the center of each quarter.  Shape each phyllo dough piece around filling, like money bags.  Then place phyllo bundles on prepared baking sheet.  Bake for 14 to 16 minutes until golden brown.  Serve warm.  Recipe makes 8 servings.
