Hot & Spicy Pork Salad

Ingredients:  Makes 4 Servings

1 lb. well-trimmed pork tenderloin, cut into 2 x ¼ inch strips

2 tablespoons reduced-sodium soy sauce

1 tablespoon Chinese hot chili sauce

½ tablespoon finely chopped garlic

3 cups shredded leaf lettuce

1 cup green cabbage

1/2 cup shredded carrot

½ cup thinly sliced red pepper

Non-stick cooking spray

Unsalted peanuts (optional)

 

Combine soy sauce chili sauce and garlic in a small bowl.  In another small bowl, combine the pork strips and one tablespoon of the soy sauce mixture.  Cover with plastic wrap and chill for about 30 minutes.  Toss together lettuce, cabbage, carrot and pepper in a large salad bowl.  Then set aside.  Spray a 10 inch non-stick pan with cooking spray.   Add pork and cook over medium heat for 5 to 7 minutes, until the meat is no longer pink.  Make sure to stir occasionally.  Drain the meat and add to the remaining reserved soy sauce mixture to the lettuce mixture.  Toss everything in the salad bowl and cover fully.  Serve with a sprinkle of peanuts.  

Sometimes, you just don’t have time to cook a four course meal and may want something light for dinner.  When I have nights like these, I resort to my savory Hot & Spicy Pork Salad.  The recipe is a family dish and not too bad on the waist line.  If you like a little heat in your salad, this is your go to meal.
